2-3 large yams (the point red ones)
1 can crushed pineapple in juice
1/2 to 3/4 cup brown sugar
1/4 to 1/2 cup butter
1 to 2 cups miniature marshmallows
Wash yams and Wrap well in aluminum foil. Bake until soft (1-2 hours) in a 350 degree oven. Remove from oven. At this point the yams can either be cooled a bit until easy to handle, or peeled immediately with a knife and fork. Either way, peel the yam and place the orange flesh into a large dish. Mash thoroughly with a fork. Add butter and stir and mash until melted. Mix in brown sugar, then pineapple with juice. Flatten out and sprinkle marshmallows generously on top.
Bake 350 until the marshmallows are golden brown. The time need will vary depending on how hot the yams were when you began. If they were pretty hot, it will not take more than 15 minutes. If they were at room temperature it will take about 30 minutes.
If you wish to make this ahead of time. Make as above without the marshmallows. Remove from the refrigerator and bake at 350 degrees for 15 minutes or so before adding the marshmallows, then cook as above.
