Amazing Authentic Guacamole

From the kitchen of the Vegas

Ingredients
3 or 4 avocados
2 slices of onion (chopped very finely)
1 tomato finely chopped
1/2 mini cucumber, finely chopped
1 TBS chopped fresh cilantro
1/2 large lime squeezed to taste
salt to taste
If you want it spicy add fresh serrano chili or green jalapeno chopped finely

Mix all the ingredients well (with your hands). Leave the avocado pit in the guacamole to keep it from browning.

cream cheese marshmallow dip

use it as a fruit dip or inside crepes with fruit

8 oz cream cheese
1 jar of marshmallow cream

mix it with a hand mixer

Best Chocolate Frosting

1/2 cup of melted butter
4 cups powdered sugar
1/2 cup cocoa powder
1/2 cup cream (could substitute milk)
1 tsp vanilla

mix cocoa powder and powdered sugar together then add the butter, cream and vanilla and mix it all with a hand mixer.

Calleen's Buttermilk Syrup

Ingredients
1/2 cup buttermilk
1 cup sugar
1 cube butter
1 tsp vanilla
1/2 baking soda

Directions
Boil buttermilk, sugar and butter lightly for a few minutes then add vanilla and baking soda. This will greatly expand and become very foamy and ready to serve asap.

Joe's Cinnamon Syrup

From the kitchen of BYU

Ingredients
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
1/2 tsp cinnamon
1/2 cup whipping cream

Directions
In a small saucepan, stir together the sugar; corn syrup; water and cinnamon. Stirring constantly, bring to a boil over moderate heat. Boil for 2 minutes. Turn off the heat and while stirring, pour in the whipping cream very slowly. Refrigerate unused portion.

Chinese salad and dressing

Dressing
1 tsp salt
3 TBS rice vinegar
1 tsp Accent
1/2 tsp pepper
2 TBS sugar
1/4 cup olive oil

Salad
Chopped iceberg lettuce
1 shredded carrot
chopped green onions
shredded chicken
salad topping wontons (different flavors)
optional bell pepper
optional sesame seeds

Cream Cheese Frosting #2

great for cakes


1 package cream cheese (8 oz)
1 stick of butter (real butter is best: soft and melted a little, but not runny)
1/2 to 3/4 bag of powdered sugar
1 tsp vanilla

mix it with a handmixer

Great frosting for fruit pizza, cake, or as a fruit dip!

1 package of cream cheese
1/2 bag of powdered sugar
1 container of coolwhip
1/2 cup vanilla yogurt


mix it all together with a hand mixer

Creamy Tomatillo Salad Dressing

(Makes about 2 1/2 cups of dressing, recipe adapted from a recipe for Cafe Rio Dressing, Chicken, and Rice that I got from my brother-in-law Kelly. See after the main recipe for variations I've tried.)

2 cups prepared Ranch Dressing (I usually use a packet of Hidden Valley Ranch buttermilk mix, but you can make your own Homemade Buttermilk Ranch Dressing or Buttermilk Dressing if you prefer)
1 small bunch cilantro, large stems removed (about 1/2 cup chopped cilantro)
2 large or 4 small tomatillos
1/2 tsp. minced garlic
2 T fresh lime juice
1 tsp. Green Tabasco sauce or 1 diced jalapeno pepper

Prepare Ranch dressing according to directions on the package or recipe you're following and set aside.

Remove large cilantro stems, then wash leaves and spin dry or dry with paper towels. Add cilantro to food processor fitted with the steel blade and pulse until finely chopped. (If you don't have a food processor, I'd chop all ingredients well by hand and then blend dressing in a blender.)

Add tomatillos, garlic, lime juice, and Green Tabasco or chopped jalapeno to the food processor and pulse until ingredients are finely pureed. Add the 2 cups of prepared dressing and pulse just a few times, until ingredients are well combined. Chill dressing for an hour or two and serve.

1/4 cup oil
3 TBS vinegar
salt

red onions

mix all together

Leave sauce in the crock pot for hours
stew meat (or any meat, sausage is good too)
bacon
canned tomatoes (some blended, some not)
garlic powder (or minced garlic cloves)
onion powder (or chopped onion)
olive oil
beef bullion
1 bay leaf
basil
other seasonings to taste
