Zucchini Bread

From the kitchen of Myrna.

Ingredients
3 eggs (beaten)
1 C oil
2 C sugar
2 C grated zucchini
2 tsp Vanilla
3 C flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 C chopped nuts (optional)
1/2 C chocolate chips (optional)

Directions
Preheat oven to 325 degrees. Grease and flour 2 loaf pans. Add oil and sugar to beaten eggs, then zucchini and vanilla; cream. Mix flour, soda, baking powder, salt and cinnamon; add to creamed ingredients. Mix until thoroughly blended; add nuts or chocolate chips. Pour into 2 loaf pans. Bake 1 hour or until done.
