1 lb cooked ground beef
tortillas
cheese
red enchilada sauce (see blog under sauce)
Chopped tomatoes
chopped avocados
Pour a little bit of the red enchilada sauce to cover the bottom of a 8x11 pan. Put a bit of the cooked ground beef and some cheese on the tortilla and roll it up and place it in the pan. Repeat until the pan is full. Pour the rest of the red enchilada sauce on top of the rolled tortillas, sprinkle cheese on top. Bake in the oven at 350 until the cheese is melted. Serve with the chopped avocados and tomatoes on top.
