Tamale Bake

Recipe from here.

Ingredients
1/4 c. shredded cheddar (or Medican Blend) cheese 
1/3 c. milk
1/4 c. egg substitute (I just use an egg)
1 (14 3/4 ounce) can cream style corn
1 (8 1/2 ounce) box corn muffin mix 
1 (4-oz.) can chopped green chilies, drained

1 (10-0z.) can red enchilada sauce
2 c. Meat (shredded beef, ground beef, shredded chicken breasts) 
3/4 c. more shredded cheese
Sour Cream
Chopped cilantro

Directions
Stir first 6 ingredients just until moist.  Pour into 9x13 baking dish sprayed with cooking spray.
Bake at 400 degrees for 15 minutes (or until firm). 
Take out of the oven and poke it liberally with a fork. Pour can of enchilada sauce over the top. Put cheese and meat over the enchilada sauce. Bake for another 15 minutes until cheese melts. Serve with sour cream and cilantro
